Executive Chef HOME & Simply Sushi
With decades of experience built across North America, North East and now South Asia, Chef Saito has substantially contributed to shaping the appreciation and perception of Japanese cuisine globally.
Chef Saito’s career began in Japan in 1979 with Muryo-Wan in Tokyo where he mastered Kaiseki, the art of multi-course Japanese dinner. He then moved to Taihachi in Chiba, where he trained extensively in the preparation of rice and fish. After moving to the USA, he joined Fujiya as Sushi Chef, in Tacoma, WA, and it was not long before he opened his own restaurant in Seattle, WA.
Years later, he was invited to join the founding team of then newly-launched MEGU in New York, NY, and in 2011 he took on the challenge to open MEGU at The Leela Palace in New Delhi, India, to huge acclaims.
In 2014, intrigued by the challenge to take Japanese cuisine out of the 5 star hotel environment in India, Chef Saito joined the PVR Group to launch Simply Sushi, an in-cinema Japanese branded F&B offering and Home, a premium dining standalone hospitality venue
